An agronomist by trade, sr. Zelaya's attention to detail, such as gravity-fed irrigation, variety separations and his use of interesting and rare coffee varieties to suit the more challenging growing areas of his farm result in a large diversity of flavour profile in his harvest.
This lot, a special picking selection of the Bourbon variety is insanely sweet, with notes of peach, brown sugar, and cocao. We love how intense the sugar notes are, which is a sign of extremely diligent picking with regards to cherry ripeness.
