In the past we’ve been skeptical of coffees from the Coban region due to it’s wet climate. Typically coffees from rainy regions can have unstable moisture due to high humidity in the drying period. This results in coffees that don’t land in our roastery tasting as they did when they were sampled.
The sample of Aurora we received was stunning. Due to the combination of mechanical driers and covered raised beds, the moisture and water activity of this coffee were extremely stable, and as a result, the coffee arrived tasting exactly how it did when we sampled it.
We love the cherry and vanilla sweetness, and depth of body of this coffee
