Cascara - Finca Santa Clara


Cascara is the term used for the dried coffee cherry skins.

When separated from their seeds, the skins of coffee cherries, when soaked in water, can make a delicious tea-like drink.

Ricardo Zelaya at Finca Santa Clara saved the skins from his Geisha variety harvest and slowly dried them, creating a cascara that smells like dried strawberry, tobacco, and lemon.
