Diever Galindez is a young producer in the beautiful town of San Agustin, in the south of Huila, Colombia.

He’s a member of the Monkaaba project, which is facilitated by the community of producers in Southern Huila, and our friends at Semilla Coffee, in Montreal.

The idea behind Monkaaba came from the fact that most coffee buyers had little understanding into what went on in coffee production. Many times, coffees from producers were introduced on a cupping table for buyers, and and were rejected because of one flavour characteristic or little reason at all. This information was rarely ever relayed back to the producer, let alone feedback that allowed the producer to understand how to improve.

It’s this kind of dedication to a community that we strive for. The belief that producers should be part of the selection process, so they have the ability to understand how their coffees are tasting is so important in developing a mutually beneficial relationship between buyers and producers.

This lot, made up of a selection of Pink Bourbon cherries, which is a variety with no ties to the lineage of “bourbon” coffee, features a citric, floral note, that we find in many coffees from Yirgacheffe, in Ethiopia.

This coffee is round, incredibly sweet, with a lemon-lime acidity, and a caramel/chocolate body.
